Okay, I understand there are about a thousand different Spaghetti Pasta Carbonara recipes out there, but I like to share my version if there is still a mom out there who has not tried it before.
Spaghetti Pasta Carbonara is one of those humble fast dinners that you can dish up in 20 minutes. I share this with my family and friends with children, and they always come back with the words, guess what is on my table tonight.
With just a few ingredients that we all have in the house and fridge, your family will praise you, and you will thank yourself for wasting less time in the kitchen. And if you are doubtful of what hubby might say, my husband loves it. It is genuinely like a breakfast pasta with bacon and eggs.
It is a fail-proof recipe, and all you need with this is a nice bottle of Fairview La Capra Merlot. For you, I repeat.😊
Ingredients
- 2 Tablespoons of Olive oil
- 1 250 g Bacon (or any bacon cut diced)
- 2 Teaspoon crushed garlic
- 1 250 ml of cream
- 4 Big egg yolks
- 1/2 cup grated parmesan cheese
- Salt and a fair amount of black pepper
- 1 500 g Pack of Spaghetti
- 2 Tablespoons of freshly diced Italian parsley
Method
- Put a large pot of water on to boil.
- Add olive oil to a hot pan. Add diced bacon and fry till nice and crispy. Now add the garlic and only stir with bacon for about 30 seconds. Garlic can burn very quickly and leave a bitter taste. Set aside.
- Place the oven on 140 degrees and put an ovenproof dish/bowl into the oven to warm up.
- Whisk the cream, egg yolks, and parmesan. Add some salt to taste, not too much as the bacon will be salty already. Give a few black pepper turns and mix all up.
- Boil pasta according to packet descriptions. Make sure it is Al dente.
- Once pasta is ready pour into a strainer and drain all excess water off.
- Take out the hot oven dish from the oven and quickly pour pasta into the bowl.
- Now add your pan-fried bacon and garlic and finally mix in the cream mixture.
- Now give the pasta a good toss and stir. I usually use two big forks to work the sauce through. The heat from the oven dish will cook the egg yolks inside the sauce.
- Once combined, put it back into the oven for not more than 5 minutes.
- Serve the pasta hot and sprinkle some flat-leaf parsley and some extra parmesan cheese over.
This pasta goes very well with a nice light green salad. Bon Apetit.
